Salmon Burger – Coach James!

Good doesn’t have to be complicated ! Coach James coming in hot with this salmon burger to get you cooking something new and yummy !

Ingredients

(makes 1 burger)
Wild Salmon 460g
Brioche burger bun
Light mayonnaise
Garlic
Ginger
Soy sauce
Fresh Chilli
Fresh lime
Lettuce
Rock salt and freshly ground black pepper
Rapeseed oil

Method

1. De-skin the salmon fillets and then mash them up using a fork to make a kind of salmon mince, mix in 1 garlic clove, grate in half the amount of ginger, add 1-2 teaspoons of soy sauce and some fresh chilli then mix together and form into a patty about 1-1.5 cm thick or slightly bigger than the bun you have.
2. Mix together 1 table spoon of light mayonnaise with half a lime a small pinch of salt and pepper and grate in some garlic
3. Slice lettuce into thin strips and mix with the garlic and lime mayo.
4. Fry the salmon patty in a little oil for around 3 mins each side over a medium heat (I like to flip it every minute to avoid it burning)
5. Toast the bun in a dry pan or under the grill
6. Assemble the burger and place the lettuce and mayo mix on top before adding the bun lid and serve with french fries and your favourite beverage!
